Flavour profile

This coffee, grown at the highest elevation on the Tito Lidio farm, has a completely distinct flavour because of the anaerobic fermentation process it undergoes.

Anaerobic fermentation of the coffee cherries results in a complex cup with flavour notes of cinnamon, papaya, cacao, rum-raisin, apple, and pastry!

Story

This coffee comes from the Danilo farm, located atop a mountain ridge in the West Valley of Costa Rica. It was created by our dear friend Esteban (whose coffee took us to the stage at the World Brewers Cup!)

This coffee comes from the Tito Lidio farm, located atop a mountain ridge in Tarrazú, Costa Rica. It was created by our dear friend Esteban (whose coffee took us to the stage at the World Brewers Cup!)

Esteban’s anaerobic fermentation process, used to create this coffee, is intriguing and complex. This year he experimented with a natural processed version: he mixes the whole cherries with extra mucilage, then ferments it for just under 20 hours in an airtight tank. Lately he’s been tweaking his method by controlling the drying phase to get a clean, but very expressive cup!

This coffee is Mathieu Theis’s choice for the 2018 World Barista Championship. He landed the 3rd place in Amsterdam with it!
