Flavour profile

Borrowing techniques that up until then were only used in the wine industry, Costa Rican farmer and innovator, Esteban Villalobos, came up with a completely new way to ferment coffee, giving coffees from his washing station a one-of-a-kind flavour profile. Esteban ferments his beans El Diamante-style, which is a fancy way of saying he ferments his beans anaerobically (i.e. he uses the whole bean).

Anaerobic fermentation is a well-known process nowadays. The El Diamante that Esteban Villalobos created was one of the first to undergo this fermentation process back in 2015. This year, we’ve selected a couple of anaerobically fermented coffees from Esteban’s region. While all of them were fermented in the same way, the variety, terroir and elevation where the cherries were grown are different, making it a perfect selection to show you exactly what Esteban’s anaerobic process is all about!

For this Tasting Box, we have selected three El Diamante-style coffees from three different farmers in the region of Esteban’s washing station for you to discover.

The story – the farm

El Diamante Roberto Leiva (Geisha) – Gingerbread, Jasmin and mango are the main flavours you’ll find here, rounded off with black tea, vanilla and a handful of floral notes.

El Diamante Esnider Rodrigues – The crazy-good acidity of green apple notes go perfectly with the sweet flavours of cinnamon and papaya. This lemonade-like cup is fresh af and leaves you with a black-cherry-and-dark-chocolate-flavoured kiss.

El Diamante Danilo – This coffee tastes like spiced apple pie, due to its pastry-like, cinnamonny flavour profile. After you’ve finished your pie-in-a-cup, this coffee kicks back with lime, orange and pomegranate notes.
