We have something truly special to offer you: El Diamante Moka, a distinct variety of coffee that is not typically found in Latin America, but thanks to the efforts of farmer Jose Calderon, it exists. The coffee beans undergo a unique fermentation process at the Cafe de Altura de San Ramon washing station. Esteban Villalobos, our trusted producer, employs an anaerobic fermentation method that contributes to the beans’ exceptional flavour profile. To achieve this, he places whole cherry beans in a sealed fermentation tank for 24 hours. But here’s where dedication takes on a new meaning—Esteban adds mucilage from different coffee beans (meticulously stored and sorted by varietal and flavour notes in a freezer) to the tank, resulting in an unparalleled and extraordinary flavour experience: cinnamon, lime, and star fruit.
