Ripe coffee cherries are stripped from their fruit using a depulper and placed in a fermentation tank to ferment for 12-48 hours. Afterwards, they’re washed to remove the remaining mucilage and dried, creating a clean cup with a bright acidity and sparkling liveliness. Washed coffees are such a treat!

Mitad del Mundo from Ecuador has a fruity mandarin flavour and a hint of dried fruits. Wibeti from Ethiopia is also fruity, but more tea-like with a floral aftertaste. And then there’s Mahembe from Rwanda with its intense sweetness that reminds us of ripe blueberries.

Wibeti has a super distinct flavour profile that comes from the high altitude, fertile red-brown clay, their washing method, and long fermentation in water tanks. All the flavours you desire from a washed Ethiopian shine bright in this coffee!
Mahembe is a washing station, privately owned by Justin Musabyiama. The flavours of this coffee are complex, with bursts of sweet berries, bright citrus, pomegranate, and herbal notes.
