When we visited Mauricio’s farms, we were struck by the natural beauty of his process. He is a master of fermentation. Using raised beds, natural elevation from the hills on his land, and capitalizing on the location’s constant fresh breeze, he’s able to produce stunning honey and natural coffees.
Mauricio’s work in coffee, with 6 small production areas located at altitudes between 1300 and 1600 meters, is a continuation of family tradition. And, his investment in an ecological processing mill has taken this tradition to the next level, allowing him to perfectly master each unique coffee processing method.
