The body is medium-full and its unique natural fermentation gives this coffee a really clean taste.

Story

It’s always cool to discover new varieties! And this one is really, really cool.

Zira Empisa is our first coffee from Uganda. We love the complex flavours it delivers which come from its unique SL varieties, presorting the coffee cherries by soaking them in water, and a new semi-anaerobic fermentation process.

To create this coffee the cherries are placed in plastic and left to ferment for about 12 hours which creates a strong lactic fermentation. Then, it’s dried on raised beds as a natural for around 10-25 days (depending on the climate).

Zira means brave, Empisa means method, and this new method is definitely one for the brave. Surprising in a very good way!
