This natural Red and Yellow Bourbon from Villa Galicia, El Salvador, is the work of producer Mauricio Salaverria – a master of micro-lots and post-harvest precision. Grown at 1550 metres in the volcanic soils of the Apaneca–Ilamatepec mountains, the cherries are shade-dried for over 25 days, revealing tropical sweetness and layered complexity.

Villa Galicia is one of several farms run by Mauricio Salaverria, a respected innovator in El Salvador’s specialty coffee scene. Nestled in the Apaneca–Ilamatepec mountain range, the farm sits at 1550 masl on rich volcanic soil, an area known for its biodiversity and fertile microclimates. Mauricio’s deep expertise shines in his meticulous natural process: only peak-ripeness cherries are harvested, rested in jute bags for a day, floated to remove defects, and then shade-dried on raised beds for over 25 days. The result is a cup full of tropical fruit notes, clarity, and sweetness.

This lot traveled from El Salvador to Europe by sailing ship – a sustainable transport method that dramatically reduces CO2 emissions, eliminates fuel dependency, and preserves cup quality with ventilated, temperature-controlled holds.
