We’re always crazy for funky fermented coffees, especially Pacamara varieties. This honey-processed Pacamara has all the characteristics of a wonderful Pacamara: bursting with tropical fruits, a heavy sweetness and a floral aroma, combined with a super clean and full body. With flavour notes of toffee, mango, white grape, but also caramel, rose and a hint of red apple.

This is our third time getting coffee from Mauricio’s farm and as always, we’re super impressed by the quality. This year, this honey-processed Pacamara blew our minds away! It has all the characteristics of a wonderful Pacamara–bursting with tropical fruits, a heavy sweetness and a floral aroma, combined with a super clean and full body.
The story – the farm
When we visited Mauricio’s farms for the first time in 2017, we were struck by the natural beauty of his process. He is a master of fermentation. Using raised beds, natural elevation from the hills on his land, and capitalising on the location’s constant fresh breeze, he’s able to produce stunning honey and natural coffees. His coffees are known to be funky, but super clean at the same time, which is an amazing feat rewarded by several wins at the Cup of Excellence.
The Pacamara variety originates from the Pacas and Maragogype varieties, some of the largest beans out there and tricky to roast well. But, when done right, Pacamara brings you a wonderful, fruity cup and syrupy sweet body with a creamy mouthfeel that reminds us of a great milk chocolate.
We’re always crazy for funky fermented coffees, especially Pacamara varieties, and this coffee just ticked all our boxes in all the right ways. Yum-my.
