This process gives a very unique flavour and characteristics due to the control done throughout the fermentation process, resulting in a high-quality coffee with sweet pastry, cherry and red currant flavour. This coffee offers complexity, and leans on the fruit side.

The lot purchased by Keen Coffee was processed with Esteban’s very special technique. The beans were fermented anaerobically in a stainless steel tank. This process gives a very unique flavour and characteristics due to the control done throughout the fermentation process, resulting in a high-quality coffee that works wonderfully as a pairing to Maria Benes’ lot. With the sweet pastry, cherry and red currant flavour, this coffee offers the same complexity, but leans a little heavier on the fruit side. Yum!

The story – the farm
Danilo Salazar is an old friend of ours. We have visited him, and his farm San Cristobal del Llano, multiple times. It is situated in Zarcero, which is in the West Valley coffee region. The farm has been in the Salazar family for over 4 decades. The Salazar family excels in their climate and agronomic management and their commitment to outstanding quality help to make this coffee excel. It’s these characteristics and drive toward quality that prompted us to buy Danilo’s coffee multiple times over the years, including 2020.
