Liza Washing Station is managed by Jean Paul, a fourth-generation farmer who has dedicated himself to improving coffee quality in Rwanda’s Nyamasheke region. With over two thousand coffee trees under his care, Jean Paul has spent years refining his craft and developing Liza into a hub for high-quality processing. One of his major investments is an on-site cupping lab, built to support his pursuit of exceptional coffees. The farmers he collaborates with grow coffee at elevations ranging from 1550 to 1900 meters above sea level. This lot is processed using a carefully controlled anaerobic fermentation method. After initial cherry sorting and defect removal via flotation, the cherries are sealed in sacks for 48 hours of fermentation in a cool, shaded environment. After pulping and a second sealed fermentation phase with mucilage, the coffee is washed and dried first in shade, then on raised beds in the sun. Jean Paul’s hands-on approach and thoughtful processing make this coffee a clear expression of innovation and care – qualities we admire deeply at Keen.
