For the past 40 years, Carlos Emilio Vélez has poured his passion into cultivating coffee at his 5-hectare farm, Los Alpes, situated in Antioquia, Colombia. Originally working in cattle ranching, Carlos shifted focus when his family acquired the property, stepping on a path of continuous agricultural mastery. A turning point arrived when he discovered Chiroso, an uncommon variety showing immense potential. Enticed by its unique attributes, Carlos integrated it into his strictly managed, eco-friendly farming systems, which now include an on-site technical biofactory.

The cherries for this natural lot are selectively hand-picked at peak ripeness and floated to ensure pristine uniformity. They undergo temperature-controlled fermentation before being moved to a traditional Colombian ‘casa helda’—a retractable drying structure that shields the drying fruit from unexpected mountain rain. This thorough processing structure builds an incredibly clean yet intensely sweet coffee.
