Nestor and Adrian Lasso took over their family farm just five years ago, but they’ve already earned their stripes as the “kings of Huila”. Their approach is highly technical; this Bourbon Aji undergoes a complex natural process involving 48 hours of oxidation followed by anaerobic fermentation and a “thermal shock” to lock in those vibrant aromatics. They even use stainless steel dehumidifiers for controlled drying to prevent any loss of flavour.

Beyond the science, this coffee represents a social shift. Nestor chose to stay in coffee because he saw the potential for specialty beans to provide real economic development for his community.
