This coffee significantly stood out on the cupping table in between a lot of heavy competition and we immediately agreed that we had to get it on board! Collaboration

We’re excited that Ally, trader of this coffee, has built such a strong partnership with the Koke washing station, supporting quality improvements and collaboration with these producers since 2011. It’s a relationship we’re excited to see develop in the years to come. Farmers check their trees every eight to ten days, selecting only the cherries at peak ripeness to ensure superb quality. Each day, their work is weighed, and they receive fair payments based on their efforts and volume before the harvest is transported for processing. At the washing station, cherries are fermented ‘in-cherry’ for two days prior to being pulped. The pulped coffee is then dried on raised beds to its optimal humidity. Get ready to explore something experimental!

Did you know: Yirgacheffe is considered by many to be the birthplace of coffee and the coffee trees grown in the region are a naturally occurring mix of heirloom varietals cultivated among other species in coffee gardens and coffee forests. Washed Coffee was introduced to Ethiopia in the 1970’s, and Yirgacheffe was the location of the first wet processing mill.
