El Diamante Processing
Developed by our long-time partner Esteban Villalobos at Café de Altura, the El Diamante method is a pioneering approach to anaerobic fermentation. Cherries are sealed in tanks for a controlled process, letting sugars and aromatics deepen and concentrate. They’re then dried naturally to preserve clarity, sweetness, and expressive flavour. The result is unmistakably “Diamante”: vibrant fruit, warm spice, and a silky, layered structure – a signature of Esteban’s craft.

El Diamante La Minilla
From Sergio Salas’ farm in Costa Rica, this natural Red Bourbon delights with gingerbread warmth, apple syrup sweetness, and a bright lime lift. Carefully processed and handpicked, it’s a rich, layered cup that embodies comfort, festive cheer, and Esteban Villalobos’ signature meticulous craft.

El Diamante Geisha
This Geisha lot from Café de Altura showcases 40 hours of anaerobic Diamante fermentation, naturally dried to perfection. Notes of red apple, brown spice, and gentle vanilla create a silky, expressive cup – elegant, comforting, and full of holiday-season warmth.
